At the wet market this morning, I was pleasantly surprised to find fresh cooked salted anchovies offered at my regular tofu stall. I happily grabbed 2 packets of 100gm each as they can be added to many dishes such as omelette, fritters, soup, fried rice, porridge, etc. The tofu seller tells me that her kids like them fried in rice with luncheon meat and egg. I will certainly try that soon!
With freshly bought tofu and salted anchovies on hand, I combined both ingredients to make this impromptu dish for our dinner tonight. Other than pepper and a few drops of sesame oil, no other seasoning is require as the rest of the ingredients will absorb both the sweetness and saltiness from the anchovies during cooking.
CELERY STIR FRY WITH TOFU & SALTED ANCHOVIES
1 block of firm tofu
100gm salted anchovies, washed & drained**
3 stalks celery, sliced
Few slices of carrots
2pcs garlic, minced
1pc shallot, minced
1 stalk coriander, cut into 1” segments
1 stalk spring onion, cut into 1” segments
A few drops of sesame oil
some hot water
1) Cut the tofu into several small pieces and pan fry all sides until lightly brown. Set aside.
2) Wash the anchovies twice to remove excess salt. Drain and set aside.
3) Heat some oil in pan. Sauteed garlic & onions until fragrant.
4) Toss in anchovies and fry until slightly dry.
