Our erratic weather has turned really warm the last few weeks and everyone at home is taking turn to fall sick from the hot sweltering heat. Every other day, I’m making sure everyone is sufficiently hydrated by giving them different types of beverages beside water – barley with winter melon, pear with white fungus & chinese almonds, barley with corn and lotus root, etc etc.

Today, I made a cucumber-basil-lime cocktail that my eldest daughter sourced from the internet and made for us once. It’s extremely refreshing and tastes great. If you’re looking for something to beat the heat, this is it !

ICED CUCUMBER, BASIL & LIME COCKTAIL

(A)
1/2 cucumber, cut into small cubes
15 fresh basil leaves
few sprigs of mint leaves
Juice from 3 limes
(or you may vary the proportion according to your taste)

(B)
1.5 litres 7-up lemon & lime carbonated drink (for a healthy version, use ‘EVIAN’ spring water)

Method :

1) Put (A) in a pot and muddle it until it is slightly softened (you may use a wooden spoon, a pestle or a potato masher)

2) Put together muddled (A) & (B) in a jar and chill in the refrigerator.

3) Add some ice-cubes just before serving.
