My regular vegetables stall sells these lovely pearl bean pods. I like to use them to make soup for the family. When cooked in pork bone soup with lotus root and carrots, these pretty red and white beans tastes deliciously creamy and nutty. Serve this soup with vegetables and a seafood dish like steamed fish, and it will be a wholesome and nutritious meal for the family.
LOTUS ROOT PEARL BEANS SOUP
350gm pork bones or pork ribs
10 – 12 pearl bean pods (remove beans from the pods)
200gm lotus root (remove skin and sliced)
1 medium-size carrot (remove skin and cut into chunks)
5 red dates
4 pcs garlic
2 thin slices of ginger
1.5 litres water
Salt & pepper to taste
1) Scald pork bones or ribs in hot water twice. Rinse and set aside.
2) Bring 1.5 litre of water to boil. Add pork ribs, red dates and garlic. Cover pot and bring to boil on high heat. After that, lower flame and leave it to simmer for 20 mins.
4) Lastly, add pearl beans and leave soup to simmer for another 20 mins. (Note : pearl beans cook quickly so do not boil it for too long or else it will disintegrate in the soup).
5) Garnish soup with coriander and serve hot.
