Although widely regarded as a vegetable, the cucumber is actually a fruit. From pickles to beauty treatments, most of us know of its many multiple uses. Our refrigerator is never short of this wonder fruit. We loves its crispiness in salads and pickles and, in our all-year round tropical climate here, it makes a refreshing drink (Iced Cucumber and Basil Cocktail – a family favourite!) and a hydrating soup.

There was some leftover mince from yesterday so I stuffed it into cucumber slices and steamed it over high heat. So easy to make, it takes only 5 mins to cook. Firm on the outside and juicy in the inside, these pretty looking steamed cucumber slices tastes as good as it looks ;D


    Ingredients :

    (A) For the Stuffing – mix well together in a bowl :
    100gm minced chicken or pork
    50gm minced shrimps
    1 chilli, seeded and chopped
    1 stalk spring onion, chopped
    1 garlic, minced
    1 tablespoon light soy sauce
    1/2 tablespoon sesame oil
    some white pepper
    1 teaspoon corn flour

    (B) 1 large cucumber

    (C) 100ml chicken stock

    Method :

    1) Prepare the stuffing.

    2) Remove the skin on the cucumber. Cut into 2cm slices and scoop out the center. Fill the center with the prepared stuffing.

    3) Place on a oven-proof plate and pour chicken stock over the stuffed cucumber slices.

    4) Place a stand in a pan and bring water to boil. Cover and steam the cucumber slices over high heat for 5 minutes. (Note : to keep the cucumber firm, do not over-cooked it)

    5) When done, drizzle a few drops of sesame oil over it and serve warm.
