Don’t know what to make for fussy little ones at meal times? Fret not. This omelette with simple ingredients will definitely appeal to even the most picky eaters. And don’t be surprised if you see your “big” guests helping themselves to it too!
The proportion of potatoes to egg is really up to you as some may like a thicker potato filling or a fluffier omelette. For the bacon bits, I use smoked crumbled bacon that comes in a pack. Alternatively, you may chopped up some fresh bacon stripes, pan fry them till crispy and then reserve the oil to make the omelette.
Makes a hearty snack for anytime of the day on its own or as breakfast, lunch or even as a dinner accompaniment.
POTATO & BACON OMELETTE
2 large potatoes (more or less, according to your preference)
salt & pepper to taste (or sprinkle some chicken stock granules)
1/2 onion, chopped
2 tablespoons smoked bacon bits
6 eggs, beaten
salt & pepper, to taste
1) Remove skin from potatoes and slice them into thin stripes. Transfer into a bowl of iced water and leave to soak for 15 mins to remove excess starch. Drain and pat dry with paper towel. Season with some salt & pepper and set aside.
4) Serve warm.
