A must-have concoction in my pantry is this garlicky spice-and-herbed-infused olive oil that is good on almost everything. With this oil, a little goes a long way. It can be used as a bread dip, rubbed onto chicken or seafood, added to sauces & noodle soups, incorporated into savoury bread and muffin mixes, in meat and vegetables stir-fry, drizzle over salads and spaghetti (perfect in aglio olio!), and much much more – the possibilities are endless! And the good news is that it’s so easy to prepare. There’s no fixed ratio on the amount of herbs and spices; it all depends on your personal taste preference but a good quality olive oil is essential.
FRAGRANT GARLIC OIL
(A) Chop coarsely the following ingredients together :
several cloves of garlic
1 or 2 bird’s eye chilli (add more if you like it real spicy)
1 or 2 stalks curry leaves
extra virgin olive oil for frying
kosher salt, to taste
1) Heat olive oil in a non-stick pan on low flame.
2) Add (A) and gently stir-fry ingredients until lightly brown and fragrant (you’ll have to keep stirring the ingredients until it’s done to keep it from being burnt). Add salt to taste
4) Keep unused portion refrigerated.
