This is one easy dummy recipe to follow. Yields 12pcs x 60 gm bread rolls or 1 medium-size loaf. Served warm or lightly toasted, it’s deliciously soft and tasty. On days when you have no time to make sophisticated bread, this is one quick and healthy bread recipe to reach for!

PUMPKIN BREAD

Ingredients

(A)
110gm Pumpkin Puree
118gm Milk
35gm Honey

(B)
300gm Bread Flour
3gm salt
1 teaspooon Instant Yeast

(C)
30gm unsalted butter (at room temperature)

(D)
1 beaten egg yolk (for eggwash)
100gm multi-grains (for topping)

Method (by hand)

1) In a cup, mix pumpkin puree, milk and honey well.

2) In a large bowl, combine flour, salt and yeast together. Make a well in the center, add pumpkin mixure and combine well with flour. Knead to form a rough dough.

3) Add softened butter and knead until dough is smooth and elastic.

4) Cover bowl with cling wrap and leave to proof for 1 hour until double in size.

5) Transfer risen dough to a floured surface and knead it into a large mould. Divide dough into 12 x 60gm smaller moulds and leave to proof for a further 45 mins.

6) Brush rolls with egg yolks and sprinkle with multi-grains. Bake at 180C for 20 mins.
